RECIPE
Avocado Toast
Ingredients:
2 slices of gluten-free bread (sourdough or Ezekiel recommended)
1/2 avocado
1 tablespoon lime juice
3 cherry tomatoes, diced
Himalayan salt, to taste
Red pepper flakes, to taste
A handful of arugula
2 boiled eggs, sliced
Optional: crumbled goat or feta cheese
Optional: cracked black pepper
Instructions:
Toast the gluten-free bread slices until golden and crispy.
In a bowl, mash the avocado with a fork.
Add the lime juice, diced cherry tomatoes, Himalayan salt, and red pepper flakes to the avocado. Mix well.
Spread the avocado mixture evenly on the toasted bread slices.
Top each slice with a handful of arugula.
Place the sliced boiled eggs on top of the arugula.
If desired, sprinkle crumbled goat or feta cheese and cracked black pepper on top.
